1. Sfoglini Organic Pasta
Who doesn’t love good pasta? We recently made dinner with a selection of Sfoglini (sfo-lee-nee) Pasta and couldn’t be more pleased with the turnout. The texture of the pasta was the right amount of al dente, without being too hard or to mushy – guaranteed to satisfy those picky little palettes at home. We highly recommend the Porcini Trumpets and the Cascatelli boxes. We made our own version of their Mushroom Ragu with Sfoglini Porcini Trumpets, and it was out of the world! The fresh porcini mushroom purée added to Sfoglini’s signature organic semolina gives way for a subtle earthy flavor that basically makes it a great pairing to any dish. Think to the effect of adding a dash of truffle oil for a umami twist. The Cascatelli (Italian for “waterfalls”) is a masterpiece created by the mind of two time James Beard Award winner Dan Pashman, creator and host of The Sporkful food podcast. Three years in the making, this original shape was created in collaboration with the artisans at Sfoglini – and as far as we are concerned, it is worth every bite! It goes with everything (we paired it with pan fried cod and tomato sauce), is great for holding sauce, and has just the right amount of chewiness (or toothsinkability, as we pasta connoisseurs call it).
Sfoglini uses Italian techniques and North American ingredients to make high-quality, organic pasta. They use bronze dies and plates to give the pasta a rough texture that helps the sauce stick, and they slow-dry the pasta at a low temperature to preserve flavor and nutrients. Sfoglini sources organic durum semolina and other grains from North American farms, and they produce seasonal pastas throughout the year. All Sfoglini pastas are made and packaged with care in New York’s Hudson Valley.
